My all-time favorite slow cooker soup recipe from Fix-It and Forget-It Recipes for Entertaining:
Delicious Sausage Soup
- 5 1/2 cups chicken broth
- 1/2 cup heavy cream
- 3 carrots, grated
- 4 potatoes, sliced or cubed
- 4 cups kale, chopped
- 1 lb. spicy Italian sausage, browned
- 1/2 tsp. salt
- 1/2 tsp. crushed red pepper flakes
My modifications:
- omit the potatoes and red pepper flakes
- grind the sausage after it's browned or cut into smaller pieces
- use only reduced sodium chicken broth and put in extra
- add another 1/2 cup of heavy cream
- add all the cooked oil/fat into the slow cooker

If you don't have a slow cooker and you're a soup lover like me try Progresso Light Southwestern-Style Vegetable. A spicy punch with only 0 points value for Weight Watchers. Boasting only 60 calories per cup [2 servings per can] with 4 grams of fiber. Oh, and don't be afraid to add some grated cheddar. Delish!
